UICOMP Faculty and Students Prepare Meal Kits for Food Pantries
Faculty member Amy Christison, MD, and first-year UICOMP medical students work to organize and assemble meal kits using shelf-stable food items. The kits include a recipe and ingredients and will serve as educational outreach for food pantries on ways they can best serve clients. Kits, information on how to create them, and other tips for meeting diverse dietary needs of clients will be presented to leaders and organizers of various food pantries in the area. This initiative was launched last year by UICOMP medical students in collaboration with dietetics students and faculty from Bradley University.
